Summertime… always a whirlwind at our cooking headquarters! Camps and classes and new projects… Take a look at some of the highlights:

Kudos to all my amazing young chefs that give so much energy and inspiration! Favorite recipe? Drum roll please:
BETTER THAN PF CHANG’S LETTUCE WRAPS!
For protein (chicken or tofu):
- 1 LB. chicken breast, cut into finger-sized pieces OR
- 10 oz extra firm tofu, drained, patted dry, and sliced into finger-sized pieces
- 3 TBS soy sauce
- 1 TBS lime juice
For dipping sauce:
- ½ cup coconut milk
- 2 TBS soy sauce
- 1 TBS oil
- 1 tsp lime juice
- 1 tsp grated fresh ginger
- 1 clove garlic, crushed
For the lettuce wraps:
- 20 large lettuce leaves (iceberg or Boston),
- 1 cup raw vegetables, grated or julienne (carrots, mushrooms, zucchini, jicama,etc)
- 1 bunch fresh cilantro
In a small mixing bowl, whisk together all ingredients for the dipping sauce. Set aside until ready to serve. Place protein “fingers” on a plate in a single layer, and season with soy sauce and acid. Let in marinate for at least 15 minutes. Grill on a hot oiled skillet or electric griddle, 2 to 3 minutes on each side. Transfer back to a plate. To assemble the lettuce wraps, place one piece of protein, some vegetables and a sprig of cilantro cross-wise at the leafy end of a lettuce leaf. Fold sides of lettuce in, and roll down toward the crunchy end of the leaf. Serve with dipping sauce in small individual bowls for double dipping.
